I am a Home Cook and mighty proud to say so. In my family, its been a tradition that the male member of the family be the cook in special gatherings and occasions. I had my share of Christmases, New Year parties and Fiestas. The biggest of which was around 400 pax during my parent's 45th Wedding Anniversary a few years ago.
The dish that brought me so much frustration is Beef Caldereta. I've tried through the years to cook it and in the end it always comes out like Beef Michado. I never had the opportunity to cook it well as the Beef Caldereta that I always buy in my favorite food stand. Today I tried again..........
After sauteing my onions and garlic I added my beef to brown it with patis and pepper to taste. When the beef juices was extracted I added soy sauce, tomato paste, carrots and celery while the beef is being tenderized. After two hours when the beef was tender I added cheese, tomato sauce, oyster sauce, liver spread, peas and potatoes for the finishing touches. Let it boil for a couple of minutes and tasted it and viola it tasted like Beef Michado again. Bummer.
Then out in the pantry I remembered there was a bottle of Skippy Creamy Peanut that was there for a long time since everybody at home is suffering from sore joints. Added a hefty sum to the beef and success. It thickened and became creamy the way Beef Calderata should be. One thing though it wasn't spicy I forgot to buy some hot sauce. Well there will always be a next time for everything and I would get it right.
